Perù VS Chile
Ingredients:
- 50ml Premium Pisco
- 25 ml Lime juice
- Egg White (1 large)
- 30 ml Seven Dates Original
- 3-4 drops Angostura Bitters
Directions
The Dry Shake (Emulsion): In a cocktail shaker without ice, combine 50ml of premium Pisco, 25ml of freshly squeezed lime juice, and the white of one fresh egg (or 25ml of aquafaba for a vegan option). Seal the shaker and shake vigorously for 10-15 seconds. This essential step emulsifies the proteins, creating that iconic, thick, velvety foam.
The Wet Shake (Chilling): Open the shaker, fill it with fresh ice cubes, and seal it again. Shake vigorously for another 10 seconds to rapidly chill the mixture and provide the perfect dilution.
The Royal Pour: Double strain (using a Hawthorne strainer and a fine mesh strainer) the liquid into a pre-chilled Coupe glass. You will see a beautiful, thick white foam form at the top.
The Peacemaker Fizz: Gently pour 30ml of chilled Seven Dates Original directly through the center of the foam. The carbonation will seamlessly mix with the liquid underneath, lifting the foam even higher and adding a spiced, effervescent kick.
The Borderline (Garnish): Carefully drop 3 to 4 spots of Angostura (or Amargo Chuncho) bitters in a straight line directly across the center of the white foam, representing the "border" between Peru and Chile. If desired, use a cocktail pick to gently drag a line through the drops, creating an elegant pattern.
Serve: Present immediately while the foam is stiff, the drink is ice-cold, and the bubbles are lively.
